She graduated in Human Nutrition and Dietetics at the London Metropolitan University in 2009. She completed 7 months of work placements in various NHS hospitals and other health care settings as part of her studies and then completed advanced courses in dietary management of obesity, gastroenterological conditions, stroke and neurological conditions as well as elderly care and nutrition support in London, Birmingham and Manchester Universities and Hospitals. She has trained on the low FODMAP diet for the management of IBS at King’s College University and became an expert in the exclusion diets in inflammatory bowels diseases. She has studied advanced courses with the British Dietetic Association in nutrition support in pregnancy (pre and post natal) as well as the pharmacological treatment of overweight and obesity with GLP1 agonists medication (Semaglutide, Wegovy, Mounjaro). Erica Ascenza studied in her native city of Pescara and in Urbino (PS) before she moved to the UK in 2000 where she later studied to become a dietitian. Initially she worked in Italy and the UK as an interpreter and private tutor for Italian and French young students studying in the UK.
